    I’m at the part in Textfugu where we are covering ~たい, and conjugation. We have the following examples:

    たべたい です
    たべたくない です
    たべたかった です
    たべたくなかった です

    Textfugu doesn’t say that たべ stops being a verb, but the addition of です makes me think that grammatically speaking it stops being a verb, and becomes something else? Am I wrong in thinking of it that way? Or at this point is です really just a particle tacked on to the end of the verb for politeness only?

    It still technically is a verb but it conjugates the same way as an い adjective. As you rightly said, です is used to make the sentence polite, regardless of the tense.

    It’s a special form. Though it conjugates as an adjective, it can rightfully use both the を or the が particle.
