It depends on the flow of the conversation. は and が is hard to practice in isolation as they are usually interchangeable. It depends on what’s being emphasized.
にほん の たべもの は きれい です。
As for Japanese food it is pretty.
にほん の たべもの が きれい です。
Japanese food is pretty.
In the first instance Japanese food is the focus, and pretty is an attribute you are bringing up about it.
In the second instance pretty is the focus and Japanese food is something that is pretty that you are now bringing up.
That said, I have difficulties with these as well, but I believe that’s accurate.

He’ll certainly have to do something better than what he currently has, as it’s instructions for Anki 1. So yeah, it should be a lot better.

If you use Firefox, you can download an add-on called Rikaisama that will pronounce Japanese words for you when you hover over them. The link is in my additional resources page.

Sounds like you are going to do a good job this time. ^_^
Having learned all those words and Kanji will be a huge benefit this time around, as even if you don’t remember most of them, you have already created the connections in your brain, which is the hard part, now you’ll just need to restrengthen them, which is relatively easy.
So many people get bogged down by vocab and Kanji that they end up giving up because their grammar is poor, and as you said you can’t do anything with all the cool stuff you have. You should do really well this time though. ^_^

There are other options as well, but it depends on exactly what you mean by ‘learn 5 cards at a time’.
At what point would you consider them learned?
Or do you mean for it to add 5 new cards a day?

Never feel like you are going too slow. You can never go too slow unless it causes you to quit or get frustrated. In which case speed it up a bit and see how you go with it until you are comfortable.
